Ingredients
- 3 egg yolks
- 3 tbsp vinegar
- 200g butter
- salt
- pepper
- estragon
Instructions
- Add egg yolks to a saucepan, over very low heat, pour in vinegar and stir till foamy.
- Pour in the melted butter butter by bit
- add estragon, salt and pepper
- keep stirring over low heat
sauce cannot not be made in advance
