Ingredients

  • 3 egg yolks
  • 3 tbsp vinegar
  • 200g butter
  • salt
  • pepper
  • estragon

Instructions

  1. Add egg yolks to a saucepan, over very low heat, pour in vinegar and stir till foamy. 
  2. Pour in the melted butter butter by bit
  3. add estragon, salt and pepper
  4. keep stirring over low heat 

sauce cannot not be made in advance
