Ingredients
- 100 g button mushrooms
- 250 ml cream
- 250 ml prosecco
- 2 tbsp olive oil
- pinch of safran
- salt
- freshly ground pepper
- 1 tsp sugar
Instructions
- Slice the mushrooms and add them to a pan with the olive oil over a medium heat
- Once the mushrooms have started to shrink, pour in the prosecco and turn up the heat to cook off the alcohol for a couple of minutes
- Return the pan to a medium heat and pour in the cream
- Add the spices and sugar, then stir, making sure the sauce doesn't boil
- Let it simmer for another 5 minutes, stirring every so often and then remove from the heat and serve
- This sauce should be made about 20 minutes before you serve the main course
