Ingredients

  • 100 g button mushrooms
  • 250 ml cream
  • 250 ml prosecco
  • 2 tbsp olive oil
  • pinch of safran
  • salt
  • freshly ground pepper
  • 1 tsp sugar

Instructions

  1. Slice the mushrooms and add them to a pan with the olive oil over a medium heat
  2. Once the mushrooms have started to shrink, pour in the prosecco and turn up the heat to cook off the alcohol for a couple of minutes
  3. Return the pan to a medium heat and pour in the cream
  4. Add the spices and sugar, then stir, making sure the sauce doesn't boil
  5. Let it simmer for another 5 minutes, stirring every so often and then remove from the heat and serve
  6. This sauce should be made about 20 minutes before you serve the main course
