Ingredients

  • 125g Almonds, blanched, skinned, toasted, and finely chopped
  • 3 Medium Eggs
  • 25g Vanilla Sugar
  • 125g Sugar
  • 125g Butter
  • 75g Flour
  • Extra Butter and Flour for the cake tin

Instructions

  1. Heat the oven to 180°C. Cream the butter with the sugar and the vanilla sugar until they are very light in color and fluffy.
  2. Separate the egg yolks and whites, beating the egg yolks into the butter mixture one by one, alternately with the almonds.
  3. Whip the egg whites until they are stiff but not dry, then fold them a third at a time into the sugar mixture alternately with the flour.
  4. Butter and flour a 25cm shallow cake tin and pour in the mixture. Bake for 40 to 45 minutes or until the top is golden brown. Serve warm or cold, with cream if wished.
