Ingredients
- 300g frozen mango cubes
- 3 star aniseeds
- 20ml sesame oil
- 300ml of beaten coconut milk
- salt for flavouring
- 3 tsp of Greg's Madras curry mixture
Instructions
- Heat the sesame oil in the pan, add the mango cubes
- While that is starting to simmer, beat the coconut milk so that it is nice and frothy
- Pour the coconut milk onto the mangos, add the star aniseed and madras curry mixture
- Let this all simmer at about 85°C for around 15 minutes
- Purée when done, make sure the star aniseed is properly puréed, otherwise it can become a rather unpleasant crunchiness.
