Mango curry sauce

Ingredients

  • 300g frozen mango cubes
  • 3 star aniseeds
  • 20ml sesame oil
  • 300ml of beaten coconut milk
  • salt for flavouring
  • 3 tsp of Greg's Madras curry mixture

Instructions

  1. Heat the sesame oil in the pan, add the mango cubes
  2. While that is starting to simmer, beat the coconut milk so that it is nice and frothy
  3. Pour the coconut milk onto the mangos, add the star aniseed and madras curry mixture
  4. Let this all simmer at about 85°C for around 15 minutes
  5. Purée when done, make sure the star aniseed is properly puréed, otherwise it can become a rather unpleasant crunchiness.
