Ingredients
- One 400 g tin of chopped tomatoes
- One large red onion, thinly sliced
- 50 g dried tomatoes, finely chopped
- 3 teaspoons of brown sugar
- 4 large brown button mushrooms, thinly sliced
- 0.25 of a fresh chilli, finely chopped
- One large apple
- One teaspoon of cinnamon
- Olive oil
- Salt and pepper to season
Instructions
- Place a deep-sided frying pan on the hob and let it heat up while you:
- Peel and slice the onion, slice it thinly
- Finely chop the dried tomatoes
- Thinly slice the mushrooms and then halve the slices
- By now the pan should be hot, add a dash of olive oil and then add the onions to the pan. Spread them out nicely and then reduce to about 60% heat. Let the onions simmer for about one minute.
- Add the dried tomatoes, chillies and mushrooms, cook for about 3-4 minutes, stir regularly.
- In the mean time, core the apple and cut into small pieces, then:
- In a separate pot at high temperature add 100 ml of water, then the apple pieces and the cinnamon. Let this cook at full power for about 5 minutes
- Now add the tomatoes to the onion mixture and then mix in the sugar. Stir vigorously and then add the salt and pepper to taste.
- Reduce to 40% power heat and let simmer till the apple timer is done. Pour the contents of the apple pot into the onion mixture and mix well.
- Check Let the onion mixture cook on for about 15 minutes, stirring occasionally.
- Check for taste, then purée the mixture.
Serving tips
Goes well with anything with pork or where a tomato flavour works. Can be served hot or cold
