This marmalade won the accolade of "very good" from Mom, if the sweet Maui onions are unavailable, substitute Vidalia. Makes about 1 1/2 cups.

Ingredients

  • 1/4 cup Balsamic Vinegar
  • 3 Garlic Cloves, chopped
  • 1/2kg Maui Onions, diced
  • 1/4 tsp ground Cloves
  • 1/4 cup Olive Oil
  • 1/4 tsp ground Nutmeg
  • 1/2 tsp ground Ginger
  • 1/4 cup (packed) golden Brown Sugar
  • 2 tbsp Tomato Paste

Instructions

  1. Heat oil in a heavy medium skillet over medium-high heat. Add onions and garlic. Sauté until the onions just begin to brown, about 10 minutes.
  2. Add vinegar and sugar and cook for 5 minutes, stirring often.
  3. Stir in tomato paste, ginger, cloves and nutmeg. Reduce heat to low and simmer until the marmalade is thick, stirring often, about 1 minute.
  4. Season with salt and pepper. Cover and chill.
  5. This can be made 5 days ahead, but must be rewarmed before serving.
