American Corn Fritters

A perfect compliment to roasted chicken or Southern fried chicken. This recipe makes 8 to 12 fritters.

Ingredients

  • 350g canned Sweetcorn Kernels, drained
  • 120ml Milk
  • 25g Butter
  • 3/4 tsp Salt
  • 2 tsp Sugar
  • 1 tsp Baking Powder
  • 100g Flour
  • 2 large Eggs, well beaten
  • 3 tbsp finely chopped Onion
  • Oil for griddle or frying pan

Instructions

  1. Place the drained corn, finely chopped onion and well beaten eggs in a bowl. Mix well.
  2. Sift the flour, baking powder, sugar and salt into a small bowl.
  3. Melt the butter and then blend it into the sweetcorn and onion mixture with the milk and sifted flour.
  4. Spoon a ladle of the sweetcorn batter on to the griddle or iron frying-pan to make a fritter. Pat the fritter into shape with a spatula. When the underside is firm and cooked, turn with a fish slice and cook until the second side is golden brown. Continue to make fritters in this way.
  5. Brush a griddle or iron frying pan with oil, then heat until the oil starts to smoke.
