A tasty and easy to make vegetable soup. Tastes great when cold too.
Notes: Best when puréed.

Ingredients

  • Bunch of spring onions
  • 1 cabbage
  • 2 leeks without the leaves
  • 3 potatoes
  • 2 carrots
  • 1 celeriac
  • 2 tbsp olive oil
  • salt
  • pepper
  • Maggi
  • Bouillon
  • 1.2 L water

 

Instructions

  1. Peel and roughly chop the vegetables, dice the spring onion bulbs, chop the stems
  2. Set a pot on medium heat, add the olive oil and spring onions, fry for 5 minutes
  3. Add the rest of the vegetables with the water and the bouillon
  4. Add 4 dashes of Maggi
  5. Cook for about 25 minutes until the vegetables are soft
  6. Purée and add salt and pepper as needed
