A simple and traditional tomato sauce
Notes: Goes well with most kinds of pasta, I prefer spaghetti though.

Ingredients
- 1 medium sized red onion
- 1 garlic clove
- 400g tin of chopped tomatoes
- 1 tsp salt
- freshly ground pepper
- 2 tbsp olive oil
- 1 dl red wine
- oregano
- handful of fresh basil leaves (optional)
- grated cheese like Gran Padano or Parmigano Regiano
Instructions
- Put a deep frying pan on medium heat, add the olive oil
- Finely chop the onion and garlic, add to the pan and fry for 5 minutes without too much stirring (the heat helps the onion gain flavour) until it is glassy looking
- Now add the dash of red wine and bring shortly to the boil for a minute
- Add the tomatoes and reduce heat back to medium
- Add your salt, pepper and oregano, stir and let the mixture cook for another 5 minutes
- Reduce heat and let the sauce simmer
- Put a pot of salted water on to boil for the pasta
- Cook the pasta as directed on the packaging, drain and mix in the tomato sauce with the fresh basil leaves (tear them if too big)
- Serve in bowls and sprinkle the grated cheese over the bowl
