A simple and traditional tomato sauce
Notes: Goes well with most kinds of pasta, I prefer spaghetti though.

Ingredients

  • 1 medium sized red onion
  • 1 garlic clove
  • 400g tin of chopped tomatoes
  • 1 tsp salt
  • freshly ground pepper
  • 2 tbsp olive oil
  • 1 dl red wine
  • oregano
  • handful of fresh basil leaves (optional)
  • grated cheese like Gran Padano or Parmigano Regiano

 

Instructions

  1. Put a deep frying pan on medium heat, add the olive oil
  2. Finely chop the onion and garlic, add to the pan and fry for 5 minutes without too much stirring (the heat helps the onion gain flavour) until it is glassy looking
  3. Now add the dash of red wine and bring shortly to the boil for a minute
  4. Add the tomatoes and reduce heat back to medium
  5. Add your salt, pepper and oregano, stir and let the mixture cook for another 5 minutes
  6. Reduce heat and let the sauce simmer
  7. Put a pot of salted water on to boil for the pasta
  8. Cook the pasta as directed on the packaging, drain and mix in the tomato sauce with the fresh basil leaves (tear them if too big)
  9. Serve in bowls and sprinkle the grated cheese over the bowl
