Banana Bread

Ingredients

  • 250g of white flour
  • 1 tbsp baking powder
  • 1 pinch of salt
  • 60 g of brown sugar
  • 60 g of soft butter
  • 50 g of extra virgin olive oil
  • 2 beaten medium eggs
  • 3 to 4 very ripe bananas

Instructions

  1. Mix all the ingredients together except the banana
  2. Peel and then squash the bananas with a fork and add to the mixture
  3. Mix everything with a mixer until you have a fairly liquid batter
  4. Pour batter into a silicon bread form, like a rectangle
  5. Cook at 180°C for about 55 minutes, if the banana bread still feels soft, cook for another 5 minutes and check again
